Roasted Chicken with Mozzarella Pizza Recipe

  • 1 Cauli Crust
  • 1/2 cup ricotta
  • About 5 oz of cooked chicken (leftover rotisserie chicken works great)
  • Small bunch of spinach and herbs
  • 1/4 shredded mozzarella

Step by Step Instructions

Step 1

Remove Cauli-Crust from packaging, and let thaw for 10 minutes.

Step 2

Using a spatula, evenly spread the ricotta over the crust.

Step 3

Scatter the chicken on top of the ricotta.

Step 4

Add the spinach and herbs.

Step 5

Sprinkle the shredded mozzarella evenly over everything. Make sure the spinach is mostly covered with the cheese so it won’t burn in the oven.

Step 6

Bake in a preheated 500 degree oven directly on the rack, for about 9-11 minutes or until the mozzarella has melted and bubbles. Anymore than 15 minutes will dry out the chicken. You could also try putting it under the broiler for just a couple minutes for a crispy cheese.
